In the little desert village of Khamlia, famous for its Gnawa music, there’s another treasure waiting to be discovered: madfouna, affectionately called “Berber pizza.” ![]()

Baked in the sand or a clay oven, this stuffed bread is hearty and full of flavor — usually filled with spiced meat, onions, herbs, and sometimes almonds or eggs. (You can even get vegetarian version!)

The name madfouna means “buried,” a nod to the way the dough is sealed and hidden around the filling before it’s baked.

For generations, it’s been a nomadic dish — simple ingredients transformed into a feast that could travel easily across the desert.
